Mickaël le CalvezChef
Mickaël Le Calvez, 29 years old, started in the business at the age of 15. While studying at Saint-Quay-Portrieux hotel school, he learnt the ropes at the Cotriade during the weekends and holidays. "From the start, I wanted to work in fine food, in 3* establishments", he confides. So, when Michel Trama, star-awarded chef, gave him the opportunity to work for him in the South-West of France, Mickaël packed his bag and went to spend five wonderful years working alongside him. In early 2013, Raffles, one of the most prestigious hotels in Singapore, offered him the job of executive sous-chef. He now assists his executive chef in eight restaurants with 110 cooks.
