Fruit jewel boxes
Originally, an entremets refers to a sweet or savoury dish served “between two courses”. Today it’s a dessert made with sponge cake, mousse and crémeux. Tart, also mostly made with fruits, comes from the Latin word ‘torta’ (round) and gives the French word 'tourte' (pie, in English), which can be sweet or savoury. Nowadays, entremets and tarts are real fruit jewel boxes.
