Understanding a sensory profile

These new sensory profiles will gradually replace radar charts that are currently available on our technical datasheets and our website. They will be replaced as flavour sensory evaluations by Les vergers Boiron expert panelists are completed.

Sensory evaluation with Les vergers Boiron
In order to establish descriptors for each sense, Les vergers Boiron created a panel of experts, trained to describe and compare different fruit purées for a given flavour.
For each fruit, this panel draws up a list of attributes related to:
- Aspect (colour, viscosity…);
- Taste (flavours, aromas);
- Mouthfeel (mouth coating, grainy…).
For each attribute, there is a given intensity on a 7-level scale. Then we obtain the sensory profile of a given purée, which is, in a way, its own ID card. The resulting data are objective, can be used for statistical purposes and provide a reliable scientific basis to describe the products.
