Guacamole and marinated mango prawns in a shot glass
- Ambient fruit purée 100% : Mango - 250ml
- Avocado - 2
- Prawns - 4
- Olive oil
Blend the avocado with 150 ml of mango puree until the mixture is smooth.
Fill the glasses halfway up with the mango guacamole and cover with the remaining mango puree then chill. At the last minute, pan-fry the shelled prawns in a little oil and season. Skewer the hot prawns and place them on the edge of the glass before serving.
