    Ingredients

    • Frozen fruit purée, sugar added : Coconut - 1 part
    • Frozen fruit purée : Banana - 1 part
    • Frozen fruit purée 100% : Lime - 1 part
    • Rum - 1 part
    • chili syrup guajillo - 3/4 part

    Shake and strain over crushed ice into a tiki mug, glass or coconut. Garnish with pineapple leaves and an orchid. Top with salted Guava "air".

  2. Salted Guava Air

    Ingredients

    • Frozen fruit purée, sugar added : Guava - 1/2 part
    • Water - 1part
    • Soy lecithin
    • Maldon salt

    Emulsify with a cake mixer or immersion blender. Skim the "air" (bubbles) off the top and use.
