    • Bay leaves - 1,5g
    • Simple syrup - 350g

    Infuse fresh leaf in simple syrup while cold for 24h

  2. Deauville, Sicily


    • Frozen fruit purée 100% : PGI Siracusa Lemon - 20ml
    • Bay leaf syrup - 10ml
    • Blackcurrant bitter - 20ml
    • Calvados - 30ml
    • Sparkling water - 50ml

    Glass: Highball

    Ice: Highball ice or large ice cubes

    Technique / Method: Add ice once all ingredients are poured directly into the glass

    Presentation / garnish: Fresh blackcurrant and sage leaf
