Executive Pastry chef, Formel B restaurants

The 30 year-old Mads Kilstrup Kristiansen, who was born in Horsens, Denmark is the Executive Pastry Chef of the Formel B group that includes gastronomic and bistronomic restaurants, as well as banqueting facilities in Copenhagen, and a seaside restaurant, Sletten, in the harbor of Humlebæk, 40 kilometers from the Danish capital.


The restaurants are all focused on ecology, sustainability and animal welfare and work closely with suppliers to respect these principles. Formula B, in all its venues, offers its guests uncomplicated cooking and a wide range of choice. As Mads puts it, “We have chosen to be free of rules, dogmas and compulsory menus.”

Mads trained as a confectioner at the Schweizerbageriet in Aarhus and as a baker at Guldbageren in his hometown of Horsens in 2008.

He participated and won gold in Denmark’s competition for young bakers in 2008 and 2011, Denmark’s best dessert in 2011 and best cake in 2013 and 2014.

He has participated three times in the Coupe du Monde de la Pâtisserie in Lyon, where the Danish team came fifth in 2015 and where Mads won the sugar sculpture prize.

In 2017, the team he captained, with Freja Krarup Johansen and Line Gorm Möller, was the only one with two women and finished 10th overall, working on a theme, the wizardly world of Harry Potter.

Mads also likes to participate in television shows and contests and is a regular fixture on Denmark’s TV2 Sukkertoppen, an original format that combines cooking challenges and humorous pranks.
