After completing an apprenticeship at age 15 in the region of Alsace, Cyril Gaïdella worked in different Alsace establishments before moving to Paris and joining Eric Kayser’s as a pastry chef.
The pastry chef then worked in several pastry shops of the Parisian group in Tokyo and funded in 2009 his own consulting firm, Consulting gourmand, which specialised in Pastry Research and Development.
During the same year, he joined l’Ecole Hôtelière de Paris CFA Médéric as trainer and consultant for the mention “Cook for Restaurant Desserts”.
In 2017, he won the final of 43rd French Dessert Championship in the Professional category.
