Its scientific name Rubus idaeus, conjures up the attractiveness of this fruit, which looks like a precious stone, and can be adapted to endless culinary ideas. Originally a wild mountain bramble, it has existed in the Americas, India and Europe for centuries. According to Greek mythology, its color comes from the daughter of the King of Crete who, whilst picking a white variety of the fruit, turned it red when her blood spurted from her breasts, scratched by the thorns of its branches. For Native Americans, the raspberry was used to make a very appreciated paste mixed with honey. In Europe, raspberries have been cultivated since the Middle Ages.
