Scottish salmon sandwich with lemongrass, citrus and ginger dressing

Sandwich
Ingredients
- Salmon - 250g
- Crab meat - 125g
- Mayonnaise - 40g
- Lime (juice and zest) - 1
- Coriander - 1/6
- Salt and pepper - As required
Cut the salmon into 5 mm slices (once the fillet is frozen) with an electric slicer.
Mix the ingredients and arrange into a rectangular shape and cut out into bite-sized cubes. -
Mandarin and ginger dressing
Ingredients
- Frozen fruit purée 100% : Mandarin - 8g
- Frozen fruit purée 100% : Mandarin - 8g
- Ginger - 5g
- Honey - 15g
- Lemon (juice) - 2
- Olive oil - 125g
Whisk all components in a blender and adjust seasoning.

In a hollow dish, pour out a bead of sauce, the salmon sandwich, include a few bunches of vegetables (e.g. purple cauliflower, mini fennel, mini carrots, shoots...) simply seasoned with olive oil and salt/pepper.
