  1. Asian pumpkin royal

    Ingredients

    • Frozen vegetable purée 100% : Pumpkin - 300g
    • Salt - 1.5g
    • - kimchi 15g
    • Carrageenans iota - 3g

    Place all the ingredients in a saucepan.

    Cook at 90°C whisking constantly.

    Place on the desired plate.

    Chill in the refrigerator at 4°C for 3 hours.

    Steam at 80°C for 6 minutes.

    Serve with: steamed prawns, steamed cockles, beetroot sprouts and cilantro cream
