  1. White chocolate tube

    Ingredients

    • Butter - As required
    • White chocolate 10 % - As required

    Cut a chocolate plastic sheet and put on some metal tubes.
    Pour in the melted white chocolate with 10% cocoa butter. Place in the freezer.
     

  2. Passion fruit mousse

    Ingredients

    • Egg yolk - 90 g
    • Sweetened condensed milk - 27 g
    • Sugar - 135 g
    • Gelatine (sheet) - 4
    • Egg white - 55 g
    • Cream - 315 g

    Boil together the cream, Passion fruit purée, sugar (45 g), sweetened milk and egg yolks to 82°C.
    Melt the soaked gelatin in the hot cream.
    Leave to cool.
    After cooling, gently whisk the cream.
    Mix first the sugar (90 g) and egg whites into a meringue, and then add the whipped cream.
    Pour into the white chocolate tube and freeze.
     

  3. Passion curd with thyme

    Ingredients

    • Sugar - 175 g
    • Noisette butter - 200 g
    • Egg - 225 g
    • Gelatine (sheet) - 2
    • Thyme - 0,5 brunch
    • Citras - 2,5 g

    Make browned butter of 400 g butter.
    Boil the passion purée, citras, brown butter, thyme and sugar.
    Strain into eggs while whisking.
    Heat to 82°C.
    Add and melt the soaked gelatin.
    Leave to set in fridge.
     

  4. Pumpkin seeds shortcrust

    Ingredients

    • Brown sugar - 25 g
    • Sugar - 35 g
    • Salted butter - 125 g
    • Salt - 1 g
    • Egg yolk - 11 g
    • Flour - 150 g
    • Pumpkin (seeds) - 35 g
    • Chemical yeast - 2,5 g

    Make flour of roasted pumpkin seeds.
    Mix the sugars, salt and butter together.
    Add the egg yolks, flour and baking powder.
    Mix gently together.
    Roll out to 2 mm thick.
    Cut into squares of 2 x 12 cm.
    Bake at 160°C for approximately 10 min.
     

  5. Thyme oil

    Ingredients

    • Neutral oil - 200 g
    • Thyme - 75 g
    • Spinach - 25 g

    Blend everything for 6 min.
    Strain.
