  1. Basil and pistachio siphon cake

    Ingredients

    • Egg white - 960 g
    • Sugar - 200 g
    • Flour - 140 g
    • Salt - 2 g
    • Lyophilized basil - 16 g
    • Pistachio paste - 100 g

    Make basil powder in a food processor.
    Mix all the ingredients and mix with hand blender.
    Strain the mixture and fill a siphon.
    Charge with 2 cartridges.
    Bake in a plastic cup in the microwave.
     

  2. Caramelized mannitol

    Ingredients

    • Mannitol - 400 g
    • Raspberries - 125 g
    • Mint (leaves) - 30 g

    Heat the mannitol until completely clear.
    Cover the raspberries and mint leaves. Reserve for the pass.
     

  3. Sauteed apricots

    Ingredients

    • Apricot - 1 000 g
    • Maple syrup - 300 g

    Heat the maple syrup, add the chopped apricots and let the juice evaporate.
    Add the Passion fruit purée and let it evaporate again.
     

  4. Strawberry cream

    Ingredients

    • Xantan gum - 3 g

    Mix using a electric mixer.
    Set aside.
     

  5. Strawberry mousse

    Ingredients

    • Hot/cold foam - 100 g

    Mix it using an electric mixer. Put 500 g in a siphon.
    If you don’t have a siphon, you can whisk it in a mixer.
     

  6. Vanilla whipped cream

    Ingredients

    • Cream 35% fat - 900 g
    • White couverture 35% - 300 g
    • Vanilla pods - 4
    • Mint (leaves) - 2 g

    Boil the cream with the vanilla, melt the chocolate.
    Rest 12 h and whisk.
     

  7. Strawberry sorbet

    Ingredients

    • Frozen fruit purée, sugar added : Strawberry - 500 g
    • Anti-cristallising agent - 5 g

    Mix the ingredients.
    Leave in a Pacojet container overnight.
    This sorbet needs to be pacotized before every service.

    Use flowers for decoration.
