Melon Foam
Ingredients
- Frozen fruit purée 100% : Lime - 12 cl
- Frozen fruit purée, sugar added : Melon - 12 cl
- Simple syrup - 12 cl
- Gelatin - 2 sheets
1. Add gelatin sheets in icy water until it softens.
2. Heat simple syrup" (do not boil), add softened gelatin sheets to simple syrup and stir to dissolve.
3. Combine the rest of ingredients and stir.
4. Then, use a strainer to remove pulp before adding inside a whipping siphon.
5. Lastly, add all ingredients in the whipping siphon. Charge with a N2O charger.
Keep cold before use. Shake 3 times before each use.
*Simple syrup - 1 part water, 1 part sugar, stir to dissolve
