Jean-Thomas has been dedicated to confectionery, an all-consuming passion, for 20 years and worked in many great starred restaurants: l’Arnsbourg, l’Espérance, le Relais Bernard Loiseau, l’Hôtel Georges V, le Meurice, la Tour d’Argent… In 2010, he became Production Manager for the opening of Café Pouchkine in Paris alongside Emmanuel Ryon (Ice Cream MOF and Pastry World Champion). In 2012, he founded his own consulting and training company, in order to share and pass on his knowledge through training and consulting programs and demonstrations. Pastry World Champion 2017 alongside Etienne Leroy and Bastien Girard in Lyon. Ice-cream World Champion 2018 alongside Christophe Domange, Benoît Charvet and Rémi Montagne in Rimini.
