Winter squash: un fruit like no other!
The winter squash is also known in different parts of the world as variants of squashes (e.g. acorn or chestnut) or gourds. In French it is known as potiron, and is classified as a cucurbitacin or cucurbit (scientific name Cucurbita maxima). The winter squash is technically a fruit, even if we often consume it as a vegetable. It need not find excuses for its double life because, after all, most fruits are often used in savory dishes. Winter squash is one of the main members of the vast squash and gourd family, alongside its small cousin the red kuri squash and its most famous and big cousin, the pumpkin. However, winter squash distinguishes itself from its illustrious Halloween star in that it is generally smaller and flatter, offers a more refined taste and has less stringy flesh. This is why it is ideal for processing into a purée, offering a velvety texture that is slightly sweeter and fragrant. It is particularly well-suited for blending with different aromatic plants and spices, such as nutmeg, ginger or cinnamon. It’s as comfortable in a soup or as a side dish with meat as it is in muffins, cookies, sorbets and plated desserts. Originating in South America, it was brought to Europe and China by Portuguese explorers in the 16th Century and is today cultivated worldwide. Its many different names (and this is just a short selection), express its great diversity and universality: in France, bright red of Étampes, big yellow of Paris and white of Mayet; in the US, green or blue Hubbard; small squash of China (but also of Natal in South Africa); blue of Hungary; black of Brazil…
