Pumpkin Espuma Punch

For 30 portions.

Hollow out one whole pumpkin and discard all fibrous strands and seeds (everyone calls this the “pumpkin brains”. Throw that stuff out). Scrape the inside of the pumpkin so its nice and clean. Now, you’ve created a punch bowl out of a pumpkin.
Add contents directly inside the hollow pumpkin, drop a large block of ice and stir to dilute.
**Float Les vergers Boiron Espuma.

*Pumpkin Spice Syrup

  • Water - 1 L
  • Cloves - 10
  • 5 allspice
  • Cinnamon sticks - 5
  • Fresh grated nutmeg - 1/2
Add contents in a sauce pan, bring to a boil then lower heat and simmer for 20 minutes. Cheese cloth strain the infused water into a container. Add equal parts of sugar to infused pumpkin spice water.

**Les vergers Boiron Lemon Espuma

Add contents in a container. Use an emersion blender by whipping and mixing the lemon juice together, then mainly by keeping the emersion blender on and slightly tilted on the surface of the lemon juice to create an espuma (foam).
