A taste for sharing know-how

 

For three generations, at Les vergers Boiron, we have shared our passion for fruit.

 

We practice our demanding craft with passion because fruit is living matter that nature never produces twice in exactly the same way and a matter of life for us. This means we have to adapt, at any given moment, to make sure that we always achieve an identical result in terms of taste, quality and the physical and chemical properties of our products.

 

Sourcing, relations with growers, varieties, “terroirs”, production conditions, harvesting, weather conditions... are some of the many variables that exemplify the complexity of our business. Over the years, we have acquired a unique combination of know-how and knowledge about fruits and their processing. We are constantly seeking to enrich this experience-based asset through a wide palette of activities and, in particular, through sensory analysis.

 

Today, as cooks, pastry chefs, ice-cream makers, barmen or mixologists, you are becoming increasingly interested in fruit purées and their distinct characteristics which are, for you, much more than simple raw materials.

 

To practice your crafts at the highest levels, you need to constantly know and understand the flavors, textures, appearance, history and culture of the fruits you use to enhance your recipes and create added taste and added value to your creativity, so that you can satisfy and delight your customers and patrons.


To this day, no one had yet created a guide and a systemic language to describe and analyze fruit purées, in contrast to the knowledge literature available to appreciate wines, chocolate, coffee or cheese.


By creating Fruitology®, we want to offer food professionals an added dimension to the tasting experience, to enable them to understand the subtleties of different fruits and fruit-based products, providing them with specific and carefully thought out words and terms so they can appreciate flavors and enrich the taste experience for themselves and the people who consume their products.  


 

Our ambition is to give the noblesse to fruits that they deserve!
