Sensory analysis is a science that, in its basic approach, may at first seem somewhat contradictory or at least paradoxical in that it is based on strictly defined methodologies designed to measure perceptions, which are then analyzed through statistical results. Nevertheless, the “instruments” of evaluation are human beings who, by their very nature, are subject to variable sensitivities, that we might want to consider or get rid of by training them. This will depend on the goals of the study.
This discipline is therefore based simultaneously on precise and scientific criteria, but also on the intrinsic subjectivity of the human senses.
This field of study is also used to more fully understand consumers and therefore to improve existing products or create new ones, satisfying both their expectations and needs.
It therefore represents a full range of methods enabling the assessment of the characteristics of a given product by human senses: visual appearance, touch and feeling, sound, smell and, of course, taste!
