Our team of experts is tasked with determining the aromatic and physico-chemical properties of each delivered batch of produce. Actually, each batch of fruits or vegetables has its own characteristics, different from one variety to another and even within the same variety in terms of shape, size, color and also taste, flavor, texture and sugar rate. However the perfect fruit that meets every single requirement does not exist, we therefore combine complementary batches to ensure the result is identical to the well-defined aromatic profile. This technique is a delicate and complex process demanding enormous experience, know-how and precision.
This is the same as the one used in the world of wine or champagne for centuries. Les vergers Boiron have been the first to transpose it for transformed fruits and vegetables.
The transformation is processed in our ultra-modern Valence plant – certified ISO 9001 and 14001 – and adapted strictly to each fruits and vegetables to respect their intrinsic qualities.

Flash pasteurization and rapid deep freezing complete the system and preserve the fruit or vegetable several months.
